These Date Nut Roll Pinwheel Cookies are a delight! 😊 Inspired by my mom’s khajur nut kopra roll, It starts off with a cookie base infused with orange zest. It is trimmed to a rectangle. A paste of dates, nuts, coconut, cardamom and nutmeg is applied onto the cookie base. The rolling is the tricky part, just be gentle with it. There will be cracks but it is ok. Roll it back and forth to smoothen out the log. Roll it in turbinado sugar. Freeze it. From there on these are “slice and bake” cookies
